Apple Ring Pancakes

The apple season is here! Many BC Farm Fresh farms are now selling fresh, local apples. Here’s a great breakfast idea from Thrifty Foods that looks and tastes amazing. Plus these pancakes have the added goodness of fresh apples. They’re as simple as dipping cored, sliced apples in batter and frying them until they’re puffed and golden.

Step 1:

 

 

 

 

To make the batter

Combine

  • 1 cup plus 2 Tbsp. all-purpose flour
  • 1/4 cup granulated sugar
  • 4 tsp. baking powder
  • pinch salt in a bowl

In another bowl, combine:

  • 1 cup milk
  • 2 large beaten eggs
  • 1/2 tsp. vanilla extract

Mix dry and wet ingredients together.

Core and cut 4 apples into 1/4″ to 1/2″ slices.

Step 2

Preheat a non-stick griddle to medium, medium-high heat. Lightly coat the surface with vegetable oil. Dip apple slices in batter, allowing excess to drip away. Cook apples about 2 minutes per side, until puffed and golden.

 

 

 

 

Step 3

Plate and serve pancakes, sprinkled with cinnamon and icing sugar, and accented with a dollop of whipped cream. You could also serve the pancakes with maple syrup.
