Availability:
BC strawberry season starts mid-June and continues through to early July, depending on the weather.
Selection:
BC strawberries are best when vine-ripened, firm, plump and bright red in colour.
Storage:
Refrigerate BC strawberries unwashed with the green hulls intact. Place in shallow pan lined with paper towel, top with
additional paper towel and cover with plastic wrap.
Preparation:
Wash BC strawberries just before serving with a light spray of water, gently pat dry and remove hulls.
MEASUREMENTS FOR FRESH BC STRAWBERRIES:
1 lb (500 g) strawberries
= 4 cups (1 L) whole
= 2½ cups (625 ml) sliced
= 3 cups (750 ml) pureed
FREEZING BC STRAWBERRIES:
PICKED: Freeze BC strawberries as soon as possible after picking. Rinse berries under cool water, gently pat dry and remove green hulls. Place in a single layer on wax paper lined cookie sheet and freeze (2 hr). Transfer to freezer bags or containers; seal, label and freeze for up to one year.
U-PICK:
Clean strawberries may be prepared in the field. Pick berries, removing hulls as you go; place directly into freezer bags. Seal, label and freeze. Before using, rinse frozen berries under warm water.
