Blueberry Melon Salsa
YIELD = 6 SERVINGS
- 2 cups 500 ml BC blueberries
- 1 cup 250 ml honeydew melon, diced
- ½ cup 125 ml red onion, diced
- ¼ cup 60 ml cilantro, chopped
- 3 Tbsp 45 ml lime juice
- 1 Tbsp 15 ml peanut oil
- 1 tsp 4 ml grated lime peel
- 1 jalapeno pepper, finely chopped
- course salt
Combine all ingredients except salt. Season with salt to taste Let stand alone one hour and then refrigerate until serving time.
