Blueberry Melon Salsa

YIELD = 6 SERVINGS

  • 2 cups 500 ml BC blueberries
  • 1 cup 250 ml honeydew melon, diced
  • ½ cup 125 ml red onion, diced
  • ¼ cup 60 ml cilantro, chopped
  • 3 Tbsp 45 ml lime juice
  • 1 Tbsp 15 ml peanut oil
  • 1 tsp 4 ml grated lime peel
  • 1 jalapeno pepper, finely chopped
  • course salt

Combine all ingredients except salt. Season with salt to taste Let stand alone one hour and then refrigerate until serving time.
