Grilled Chicken with Raspberry Sauce

Here’s a great BBQ recipe that combines two summer favorite that may not have occurred to you before: fresh raspberries and grilled chicken. A tasty, nutritious dinner that captures summer’s great flavours.

 

 

Ingredients

  • 3/4 cup raspberry jam
  • 2 Tbsp. raspberry vinegar
  • 1 Tbsp. honey
  • 1 Tbsp. soy sauce
  • 1 tsp. grated orange zest
  • 3 Tbsp. water
  • 1 cup fresh or frozen raspberries
  • 1 Tbsp. chopped fresh mint
  • Salt and freshly ground black pepper to taste
  • 4 (6 oz.) boneless, skinless chicken breasts
  • 1 Tbsp. olive oil

Method

Preheat your grill to medium-high. Place the first 6 ingredients in a small pot. Bring to a simmer and cook and stir until the jam is melted and well incorporated with the other ingredients. Strain the mixture through a fine sieve into a second small pot. Stir in the raspberries and mint; season with salt and pepper.

Cover and reserve sauce on low heat. Brush the chicken with the oil; season with salt and pepper. Grill 4 minutes per side, or until cooked through. Plate the chicken, top with sauce and serve.

Recipes Options: Instead of chicken breast, serve the sauce with another type of grilled meat, such as pork tenderloin, or serve it with fish, such as salmon. Instead of raspberries, make savoury blackberry sauce by replacing the raspberries and raspberry jam, with blackberries and blackberry jam.
