Gouda Macaroni

Here’s a comfort food favorite with an adult twist – fresh Gouda cheese.

 

 

 

 

 

 

 

Ingredients

  • 3 1/2 Tbsp. butter
  • 2 1/4 cups macaroni
  • 3 Tbsp. all-purpose flour
  • 2 1/2 cups warm milk
  • 225 grams Gouda cheese, grated
  • 1/4 tsp. paprika
  • Salt and white pepper to taste
  • 2 Tbsp. chopped fresh parsley
  • 1/4 cup breadcrumbs

 

Method
Preheat the oven to 350 degrees F.

Use 1/2 Tbsp. of butter to grease a 9″ x 13″ casserole.

Boil the macaroni until just tender, about 8 minutes.

While the macaroni cooks, melt the 3 Tbsp. butter in a medium-sized pot over medium heat. Mix in the flour and cook 2 minutes more. While whisking steadily, slowly add in the milk. Cook, whisking constantly, until the mixture comes to a simmer and lightly thickens. Remove from heat and mix in three quarters of the cheese along with the paprika, salt, pepper and 1 Tbsp. of parsley.

When the macaroni is cooked, drain it well; mix it into the cheese sauce and then spoon it into the buttered casserole dish. Top with the remaining cheese and breadcrumbs.

Bake for 25 to 30 minutes, or until golden. Sprinkle with remaining parsley and serve.

Note: The milk can be warmed in the microwave or in a small pot over medium-low heat.
