Mediterranean Style Warm Potato Salad

Ingredients

  • 1 garlic clove, minced
  • 2 Tbsp. fresh lemon juice
  • 2 tsp. Dijon mustard
  • 1 tsp. ground cumin
  • 1 tsp. paprika
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp. sugar
  • 1/3 cup olive oil
  • 2 lbs. baby new white or yellow-fleshed potatoes, each halved
  • 2 medium ripe on-the-vine tomatoes, diced
  • 1 medium green bell pepper, diced
  • 1/3 cup finely chopped red onion
  • 1/4 cup chopped fresh mint
  • salt and freshly ground black pepper to taste

Method

Combine the first 8 ingredients in a salad bowl. Gently boil the potatoes until just tender, about 10 minutes. Drain potatoes well and add them, tomatoes, bell pepper, onion, mint, salt and pepper to the salad bowl. Toss to combine; serve salad immediately.

Recipe Options: Instead of two on-the-vine tomatoes, use eight to 10 cherry tomatoes, each quartered, in this recipe. Instead of mint, try another type of fresh herb in this recipe, such as basil or oregano, or use a mix of fresh herbs. If it’s what you have on hand, instead of red onion, use chopped yellow onion in this recipe.
