BC Strawberry Bruschetta

  • Fresh BC Strawberries and Brie cheese make a delightful combination for a light brunch! 
  • 1 (675 g) unsliced loaf French or Italian bread
  • 1 lb (500g) Brie or Camembert cheese
  • 3 cups (750 ml) BC STRAWBERRIES, washed & hulled
  • ¼ cup (50 ml) Demerara sugar
  • 2 Tbsp (25 ml) finely chopped fresh mint or coriander

Preheat oven to 350°F (180°C). Slice loaf in half lengthwise. Thinly slice cheese and evenly cover cut halves. Thinly slice berries and scatter evenly over cheese. Sprinkle each half with 2 Tbsp (25 ml) Demerara sugar. Place on a cookie sheet and bake in the center of oven for 10 to 12 minutes or until cheese is melted and begins to bubble. Remove from the oven and sprinkle with chopped mint. Makes 6 to 8 servings.
